With LoafNest, it is always fun to mix more grains to the flour. In this recipe we threw in some quick-cooking oats into the mix.
- White bread flour : 400g
- Oats [Quick cooking ones] : 100g
- Salt : 8g
- Yeast : 0.5g
- Water : 420 ml
Note that we added a little bit more water since oats absorb quite a lot of water.
Follow the basic LoafNest recipe.
Mix all ingredients and leave for 12-18 hours.
Pre-heat LoafNest casserole with lid for at least 45min at 230C/450F
Insert the LoafNest liner into the casserole and pour the mixture in.
Bake for 45 min.
Wonderful looking loaf with the nice texture and flavor of oats. We were worried the loaf would be gummy or slimy due to oats. Not at all! The crumb was as usual airy and flavorful.
